Agriculture is the backbone of Indian economy. In recent years the production of agriculture is increased due to improved crop varieties, cultivation practices and farm mechanization. However, the agriculture commodities being perishable are lost to the extent to 20 to 25 % due to non processing, value addition and cold chain and in turn results into shortage of food to ever increasing population. It is the need of the day therefore to go for post harvest management processing technology and value addition. Food technology is the only area wherein, the demand for food of huge population could be met.
